Gottam Kaja vs Tapeswaram Kaja: Which Should You Buy?

Ask anyone in the Godavari districts about kaja and you will get two answers. One is the folded, layered Tapeswaram kaja. The other is the hollow, tube-shaped kaja that many people know as Kakinada kaja, and that we call gottam kaja. Both are made from the same idea, but they are not the same sweet.
What gottam kaja is
Gottam means tube or pipe. Gottam kaja is rolled into a hollow cylinder before frying, so it puffs into a crisp tube with layers running around it. Once fried, it is soaked in sugar syrup that settles inside the hollow.
What Tapeswaram kaja is
Tapeswaram kaja is folded flat rather than rolled. The layers stack on top of each other, so when it fries the sheets lift apart like the pages of a book, and the syrup runs between them. It is softer and juicier to bite into.
The real differences
Texture: gottam kaja is crunchier and drier on the outside; Tapeswaram kaja is juicier and flakier.
Shelf life and travel: gottam kaja holds its crispness for longer, which is why we recommend it for couriering to other cities and for gifting that may sit for a few days before it is opened.
Price: both are close. Gottam kaja is ₹320 per kg (about 22 pieces), and Tapeswaram kaja is ₹300 per kg (also about 22 pieces). Smaller 250 g and 500 g packs are available for both.
Which one should you buy?
Eating it at home this week, or serving guests today? Choose Tapeswaram kaja for that juicy, layered bite. Sending it out of town, packing a gift box, or want something that stays crunchy? Choose gottam kaja. If you cannot decide, buy 250 g of each and settle it at the table.
Storing both
Keep either kaja in an airtight box in a cool, dry place, out of the fridge. They stay good for about 15 days. If the crunch fades, warm them briefly in an oven.
