Ice Cream Barfi: The Soft Milk Barfi Kids Love

Ice cream barfi is one of the sweets people search for most, and one of the most misunderstood. It is not frozen, and there is no ice cream in it. The name comes from its texture.
What ice cream barfi is
Ice cream barfi is a soft, creamy milk barfi. Milk is cooked down slowly with sugar until it sets into a smooth block that melts in the mouth, much the way good ice cream does. That soft, rich, mildly sweet bite is where the name comes from.
Why children love it
It is gentle. There is no crunch to fight with, no strong spice, and it is not cloyingly sweet. In our customers' homes it is usually the first sweet the children finish, which is why we often suggest adding it to a family sweet box.
Ice cream barfi price per kg
Ours costs ₹580 per kg, with about 25 pieces in a kilo. It also comes in 250 g (₹160) and 500 g (₹300) packs. Milk sweets cost more than flour and jaggery sweets because a kilo of barfi needs several litres of milk cooked down for a long time.
How to store it
Ice cream barfi is a milk sweet, so it does not keep as long as ghee-fried sweets like kaja. Keep it in an airtight box, in the fridge if your home is warm, and eat it within a few days for the best texture. Take it out about 15 minutes before serving so it softens back to that creamy bite.
What to pair it with
Because it is mild, it balances well with something crisp. A plate of ice cream barfi with a few pieces of kaja or some namkeen gives guests both soft and crunchy, sweet and savoury.
